Wattle Seed

This Australian Native, and key floral feature on our Australian national emblem, gives us the seeds that add a lovely nutty aroma with vanillan undertones. Used at the correct level they can add a depth to the gin to enhance the flavour profile or add too much and it will dominate the gin with an earthy overload!
